This carbonic style Grenache is full of aromas of strawberry cream, tea leaves, summer herbs and flavors of cherry, cedar and cinnamon. It’s unfined and unfiltered and a juicy and fresh chillable red.Â

Carbonic Wines:Â
Carbonic wines refer to carbonic maceration, which is essentially a different type of fermentation. A typical fermentation process transforms the grape juice into alcohol via a yeast fermentation. The yeast, whether naturally present on the grapes or added by the winemaker, “eat” the natural sugars in the grape and converts them into alcohol. In carbonic maceration, however, the initial fermentation is not caused by yeast, but instead occurs intracellularly. Which is a fancy way of saying that it happens inside of each individual grape. Whole bunches of grapes are placed inside of a vessel that is sealed and filled with carbon dioxide. In this oxygen free environment each berry begins to ferment from the inside. You can expect flavors of Bubble gum, kirsch, Banana, and ripe strawberry often. Sometimes there will even be cotton candy-like flavors as well.
