2020 Le Moulin Chapitre Chinon

Tasting Notes: 

Aromas of red fruit and just a touch of smoke on the nose. In the mouth the wine offers ripe, rounded tannins. The fact the vines are old is evidenced by the concentrated and rich mouthfeel, without however the wine losing the typical freshness that is the true characteristic of Cabernet Franc. The finish is long, fresh and balanced.

Moulin du Chapitre & Foucher-Lebrun Négociant:

Foucher-Lebrun was founded in 1921 by Paulin Lebrun, a cooper by trade, who developed the company by servicing a clientele made up of restaurants and cafes. During the 1950s, his son-in-law, Raymond Foucher, began bottling the company's wines and in 1985 handed over the management to his son, Jacky Foucher. In late 2009, Jean Mounard, a Parisian fine wine merchant, joined Foucher-Lebrun with the goal of raising its image and developing business overseas.

This Moulin du Chapitres Chinon takes its name from an old mill, where the winemakers used to meet twice a year, and then had a talk about the harvest to come and other matter of the vineyard.

Cabernet Franc: 

Cabernet Franc is a dark-skinned French wine grape variety grown in most wine producing nations. The variety is most famously known as a key red grape in the Loire Valley and as the third grape of Bordeaux. It can be found in many of the world's top Bordeaux blend wines. It is known as one of the two parent grapes of Cabernet Sauvignon. Sauvignon Blanc being the other. 

While Cabernet Franc grapes have thinner skin and lower acidity than its progeny, it is also known for its hardiness. It ripens relatively early in the growing season making it less susceptible to the threat of poor weather later in the season. It is often grown as an "insurance" grape, able to produce good yields if managed correctly. 

Chinon, France: 

Chinon has been producing wines for many centuries and although wines of all 3 colors are produced, the vast majority of wines made there today are red. The wine region of Chinon covers 26 communes in the middle loire that are clustered in a roughly 12 mile radius around the town of Chinon on the southern bank of the Loire river. 

Looking at the map, Chinon may look like another stop on the Loire’s eastward journey to the sea. But it actually sits at the magical point where the climate begins to get just enough maritime influence to moderate the harsher continental climate to the east. The result is a climate that allows Cabernet Franc to ripen - but just barely. 

Food & Wine Pairing: 

Thanks to its tannic structure, Chinon pairs perfectly with dishes such as steak, roast beef, or leg of lamb. It can also be enjoyed with grilled meats or saucy dishes. Furthermore, Chinon can also be served with cheeses. Goat cheeses in particular make an excellent pairing with this Loire wine.
